Harold's baked spinach hotdish


2 10-ounce boxes chopped frozen spinach
8 slices bacon
1 medium onion, chopped
1/2 pint heavy cream
8 ounces Swiss cheese, shredded
2 4-ounce cans minced clams, drained
3 tablespoons flour
Parmesan cheese


Preheat oven to 250 degrees. Thaw spinach and drain. Cook bacon until crispy. Remove bacon from pan and set aside. Brown onion in bacon grease. Crumble bacon into onion mixture. Add spinach, Swiss cheese, cream, clams and flour. Stir. Cover and simmer on low heat 15-20 minutes, stirring occasionally. Place in greased 2-quart casserole dish. Sprinkle with Parmesan cheese. Cover and bake at 250 degrees for 30 minutes.
